Upgraded Spring Rolls
Did you know that seaweed has one of the most underrated foods? Well at least now. It used to be all the rage and you would see people adding spirulina to everything, but now it has somehow been replaced by matcha (still an amazing plant of course). Seaweed snacks also were and still are addicting, however, unless you're eating sushi on a daily basis, you're probably not eating much seaweed. Nori is the seaweed that is the perfect vessel for your sushi rolls, yet a powerful food all its own. Its packed with B vitamins for energy, iodine to boost your thyroid function, minerals like zinc and selenium, and it contains nearly all of the essential amino acids our body needs for protein synthesis!
So, as I was rummaging around my cupboards I found some nori sheets that I bought a month ago and forgot about like a fool. Looking in the fridge I pulled out some veggies, left over guac and wah-lah a super simple light lunch or snack was conceived. Heres the deets:
NORI SPRINGROLLS
- 2 sheets of nori
- 1 carrot sliced into thin strips
- 1 organic cucumber, deseeded and cut into thin strips
- 1 avocado or left over guacamole
- 1/2 mango sliced into thin strips
- handful of spinach or romaine
- handful of mint or cilantro
- 1/2 lime or lemon
Assemble:
Lay nori sheet flat, and at one end layer spinach, carrots, cucumber, avo, and mango so that 2/3 of the nori are covered.
Use a damp cloth to wet the dry end of the nori, kind of like how you would like an envolope
Roll the veggie filled side until you come full circle and you wrap is complete
Eat dipped in almond butter sauce, soup or more guacamole!
