Perfectly Roasted Eggplant | Cooking on the Cape

Happy Friday to all and a blessed holiday season. Currently I’m nestled in Cape Cod, housesitting and working on exciting projects to come for 2020! After a few hours staring at a screen I poured myself a tea, and was about to make lunch when I decided to just make this very unprofessional video on how to make my perfectly roasted eggplant. It pretty simple, you can switch up to use whichever herbs you desire, but the result is a silky inside and crisp out side.
