Squash Fries
I know I keep saying it but autumn is honestly my favorite season for food!! Why? well because all of natures comfort foods are available for us to enjoy. And what's the number one comfort food? FRIES!!! and Mother Earth also blessed us with the other ultimate comfort food, WINTER SQUASH!! My sister is a fry fiend, if you're ever in Detroit I will give you her contact information and she will tell you in length all the best places to get them.
But most likely you're not in Detroit looking for fries, so I've got you covered with these awesome alternatives. Winter squash is so jammed packed with vitamins, that it really is a gift from nature to keep those cold and flu's at bay. Squash is also naturally sweet, and acts as a grounding food, low in sugar that is great even for those dealing with candida.
I love them on top of sauteed kale, with an avocado and drizzle of truffle oil (yes I get fancy sometimes).
Butternut Squash Fries
- 1 butternut squash peeled
- 1-2 T coconut oil melted
- 1 tsp both cinnamon and paprika
- salt to taste
Pre-heat oven to 375 * F.
Peel and de-seed your butternut squash. Slice squash in half.
Cut it up into french fry shapes and toss with coconut oil and spices.
Place on a cookie sheet . Cover lightly with kosher salt.
Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process.
Fries are done when they are starting to brown on the edges and get crispy.
Serve with truffle oil, guacamole, hummus, almond butter, or whatever your heart desires!
