CocoBeet Soup
This soup is so simple, delicious and super nourishing. Best thing about it is it's a chop and dump type of recipe for when you're not feeling super inspired to cook (or simply don't have the time). Balancing healthy eating with a full personal life doesn't have to be complicated, so go ahead and enjoy this super simple soup!
Scarlet Soup
- 1/2 Red or white Onion
- 3 Carrots
- 1 Red potato
- 1 Beet
- 1 1/2 cup of coconut milk
- 1 Tablespoon of hot sauce
- 1 Teaspoon each of red pepper flakes, ginger, paprika, and curry
- 1 Teaspoon of salt
- ¼ cup asparagus, parsley, spinach or sprouts to top
Directions
- Chop everything
- Simmer onion in medium sauce pan with a tsp or two of ghee
- Add Potatoes and simmer for 3 minutes
- Add 4 Cups of water or broth
- Add carrots, beet
- Bring to a boil.
- Add spices and simmer for 25 minutes
- Add coconut milk and simmer 15 minutes
- Blend with an immersion or regular blender and top with hemp seeds, broccoli sprouts, a dollop of guacamole or whatever strikes your fancy
