Primal Cacao-nut Cookies

Growing up my mom was known to make the BEST chocolate chip cookies in the neighborhood. She would make them for everyone's birthday, cookout, holiday, and after school treat. I wasn't the biggest fan of the cookies, but give me some of the raw dough and I was on board with everyone else. Today I am always on the quest to make desserts that are just as crave worthy as my mom's cookies but are also secretly nourishing to the body as well. 

Most people have heard the inflammatory effects of gluten, and white sugar on our bodies. So these cookie's are free of all uber processed ingredients, and contain no grains what-so-ever. Yes, they are paleo, keto, ovo-vegetarian friendly, and they are BOMB.COM. Simple ingredients with explosive taste and nutrient value:

Flax seed: high in anti-inflammatory omega-3 fats and protein

Coconut butter: high in fiber and brain boosting MCT oils

Cacao nibs/dark chocolate: highest antioxidant rich food to fight free radical damage

Pasture eggs: good source of choline for proper brain function as well as B-vitamins

Vanilla and cinnamon: boost circulation and libido!! 

Coconut sugar or Lakanto: lakanto is a sugar free sweetener derived form monk fruit and has no effects on blood sugar. Coconut sugar is a low glycemic sweetener that is also full of healthful minerals.

Primal Cacao-nut Cookies

1 cup of coconut butter softened

3/4 cup ground flax seeds

2 pasture raised local eggs

1 tsp vanilla

1 tsp salt and baking soda

1/2 cup lakanto or coconut sugar

2 tsp cinnamon

1/2 cup cacao nibs or dark chocolate (at least 80%)

1. Preheat oven to 350*

2. Soften coconut butter on a double boiler then remove from heat. Add in 2 eggs, vanilla, and coconut sugar and mix until well combined.

3. Mix in ground flax, cinnamon, baking soda and salt then let the dough rest for 5-10 minutes. Lastly stir in the cacao or chocolate.

4. Make 1" balls with the dough then flatten on a pan lined with parchment paper. Bake for 10-12 minutes until the edges of the cookies start to brown.

5. Remove to cool (if you can wait that long) then the best part... Nourish!
